Siciliana Pizza
A classic Sicilian pizza recipe.
Prep time: 6 hours
Cook time: 15 minutes
Serves: 4
Ingredients:
The dough:
2 cups flour
½ sachet dry brewerâs yeast
1 cup Remilled semolina
1 tsp Salt
2 spoons Olive oil
1 1/2 cups water
1 tsp sugar
The dressing:
Braid of Mozzarella
Peeled tomatoes
Oregano
Basil
Salt
Anchovy fillets
Preparation:
In a bowl, put the yeast, sugar and flour and first mix. Add salt and water gradually, if the dough gets too hard, add more water and if itâs soft, do not add the remaining water.
Lastly add the oil and begin using your hands to knead passing the dough on a pastry board. You can put the dough inside a planetary mixer if you have one and use a hook.
Take at least 10-15 minutes kneading the dough and when you get a soft but not a sticky ball, allow it to rest for at least 3 hours after sprinkling it with flour.
Get a baking sheet and grease it. Roll out the dough on it and obtain a layer that is not too high. Leave it to rise for another 3 hours.
Preheat the oven to maximum temperature. Season the tomato sauce with oregano, basil, oil and anchovy fillets, also stuff the well risen pizza and bake it for at least 10 minutes. Underneath, it should be golden brown.
Take the pizza out from the oven and fill the entire surface with crumbled mozzarella and then bake for more 5 minutes until the mozzarella melts.
Remove from the oven and before serving let it rest for at least 5 minutes.
Advice
This particular dough is great with any filling type so you can leave the anchovy if you donât like it.
